Universal Boxing Organization™ (UBO) World Lightweight Champion Mason Menard (19-1, 14 KOs) will make the first defense of his title on June 16 at the Evangeline Downs Casino in Opelousas, Louisiana against dangerous challenger “Lightning” Lonnie Smith (14-3-2, 10 KOs).
Menard won the UBO World title in August 2011 when he impressively stopped former WBO world title challenger Joseph Laryea from Ghana in four rounds, and he has since stayed busy with clear victories in non title fights over Rynell Griffin and Herbert Quartey.
Mason is a boxing personal trainer at Red's and we would love to see everyone go out and support him on June 16th. Also fighting on the card that night are Bailey Bobbitt and Dylon Hollier,Red's member. Good luck to these guys and hope to see you there.
The Lafayette City Police have asked us to alert our members about several car break-ins in parking lots around town. Red's is no exception. Please do not leave you valuables inside your car (locked or not). This is a prime target for thieves. If you see someone acting in a suspicious manner, report to the Front Desk or phone the local police and report the occurrence. We're asking everyone to do your part and together we can make Red's as safe as possible.
Also, do not leave any valuables (purses, cell phones, keys, gym bags, etc.) inside Red's unless they are locked up. Remember, we provide security lockers at the entrance, mens locker room and near the entrance to the ladies gym for small valuables. Please be responsible!
Serves: 4 Hands-on time: 10 minutes Total time: 40 minutes
4 bone-in skinless chicken breasts
¼ cup brown rice
1 cup shredded red cabbage
1 cup peeled and diced mango
2 tbsp chopped fresh cilantro
2 tbsp fresh lime juice
1 ½ tbsp low-sodium soy sauce
1 tsp sesame oil
8 egg roll wrappers
Preheat oven to 375F. Mist a large baking sheet with olive oil cooking spray. Place 4 bone-in skinless chicken breasts on sheet and roast until cooked through and no longer pink inside, 25 to 30 minutes. Maintain oven temperature.
Meanwhile, cook ¼ cup brown rice according to package directions.
When chicken is cool enough to handle, use a fork to shred meat from the bone, making 2-inch pieces.
Combine chicken, 1 cup shredded red cabbage, 1 cup peeled and diced mango, rice, 2 tbsp chopped fresh cilantro, 2 tbsp fresh lime juice, 1 ½ tbsp low-sodium soy sauce and 1 tsp sesame oil; mix well.
Spoon mixture diagonally onto centers of 8 egg roll wrappers, dividing evenly. Fold both short corners up and over filling. Fold 1 long corner to center; roll towards remaining corner. Transfer rolls to baking sheet, seam side down, and mist with cooking spray. Bake 10 to 15 minutes, or until golden brown.
According to the “overload principle,” for muscles to become stronger, they have to be challenged with a load that’s heavier than what they’re used to. (Women, think about the weight of your handbag—dinky three-pound dumbbells just don’t compare.) Without challenging your muscles, you can’t substantially strengthen or tone them.
Action plan: Choose a weight that you can lift for only 10 to 15 repetitions before losing good form—trainers call this “working to failure.” (That doesn’t mean your arms should feel like noodles when you’re done, or that you can’t bang out a second set after a minute or two of rest.) The most important thing is that you are progressive and continuously stressing your muscles as you get stronger. When you quit increasing your weights, your muscles quit growing. But don't forget, once you are happy with your body, you must regularly change your routine to maintain that level.
